Goat Cheese-Stuffed Sweet Pepper Poppers

packages (4 oz each) chèvre (goat) cheese

tablespoons heavy whipping cream
1/4
cup thinly sliced green onions

clove garlic, finely chopped
1/2
teaspoon crushed red pepper flakes
1/4
teaspoon salt

cup Progresso™ plain panko crispy bread crumbs
1/4
cup shredded Parmesan cheese

tablespoons butter, melted

mini sweet peppers (red, yellow and orange), halved lengthwise, seeded (1 lb)

teaspoon chopped fresh thyme leaves

Steps
- 1Heat oven to 350°F. Spray cookie sheet with cooking spray. In medium microwavable bowl, microwave goat cheese and whipped cream uncovered on High 30 to 60 seconds or until softened. Stir in green onions, garlic, pepper flakes and salt.
- 2In another small bowl, mix bread crumbs, Parmesan cheese and melted butter.
- 3Divide goat cheese mixture evenly among pepper halves. Sprinkle peppers with bread crumb mixture; gently press into goat cheese mixture. Place on cookie sheet.
- 4Bake 30 to 34 minutes or until tops are light golden brown and peppers are tender. Sprinkle with thyme. Serve warm.
